Description

A comforting and nourishing Chicken Noodle Soup, perfect for chilly days or when you’re feeling under the weather.

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 8 ounces egg noodles
  • Fresh parsley for garnish

Instructions

  1. 1. In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. 2. Stir in the garlic and cook for another minute.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the shredded chicken, thyme, salt, and pepper.
  5. 5. Reduce heat and let simmer for 10 minutes.
  6. 6. Add the egg noodles and continue to simmer until the noodles are tender, about 8-10 minutes.
  7. 7. Serve hot, garnished with fresh parsley.
