Description

A flavorful and comforting chicken tortilla soup loaded with shredded chicken, sweet corn, tomatoes, and spices, served with crunchy tortilla chips.

Ingredients

  • 1 lb chicken breasts (shredded)
  • 4 cups chicken broth
  • 1 can corn (drained)
  • 1 can diced tomatoes
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1 bell pepper (chopped)
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Tortilla chips (for serving)
  • Shredded cheese (for serving)
  • Sour cream (for serving)
  • Fresh cilantro (for garnish)

Instructions

  1. 1. In a large pot, sauté onion and garlic until fragrant.
  2. 2. Add chopped bell pepper and cook until tender.
  3. 3. Stir in shredded chicken, corn, diced tomatoes, chicken broth, cumin, chili powder, salt, and pepper.
