Description

A comforting one-pot meal that combines chili and macaroni into a cheesy, savory dish, ready in under an hour.

Ingredients

  • 8 ounces elbow macaroni
  • 1 pound ground beef
  • 1 can (15 ounces) kidney beans, drained and rinsed
  • 1 can (15 ounces) diced tomatoes
  • 1 can (10 ounces) chili-style diced tomatoes
  • 2 cups shredded cheddar cheese
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. 1. Cook the macaroni according to package instructions; drain and set aside.
  2. 2. In a large skillet, heat olive oil over medium heat. Add ground beef and cook until browned.
  3. 3. Stir in the chili powder, garlic powder, salt, and pepper.
  4. 4. Add the kidney beans, diced tomatoes, and chili-style diced tomatoes to the skillet; mix well and simmer for 10 minutes.
  5. 5. Combine the cooked macaroni with the beef mixture.
  6. 6. Stir in 1 cup of cheese until melted and creamy.
  7. 7. Sprinkle the remaining cheese on top and cover until melted.
