Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced
  • 2 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 2 cups cooked rice
  • 1 cup black beans, drained
  • 1 cup corn, canned or frozen
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • Sour cream or Greek yogurt for topping (optional)

Instructions

  1. In a bowl, whisk together lime juice, olive oil, cilantro, cumin, garlic powder, salt, and pepper.
  2. Marinate the chicken in the mixture for at least 30 minutes.
