Ingredients
4 boneless, skinless chicken breasts
1/4 cup lime juice
1/4 cup cilantro, chopped
1 tablespoon olive oil
2 garlic cloves, minced
1 teaspoon cumin
Salt and pepper to taste
2 cups cooked brown rice
1 cup black beans, rinsed and drained
1 cup corn, frozen or canned
1 avocado, diced
1/2 cup cherry tomatoes, halved

Instructions
In a bowl, mix lime juice, cilantro, olive oil, garlic, cumin, salt, and pepper.
Marinate chicken in this mixture for at least 15 minutes.
Heat a grill or skillet over medium-high heat and cook chicken for about 6-8 minutes per side, until fully cooked.
Remove chicken from heat and let it rest for 5 minutes before slicing.
In serving bowls, layer cooked brown rice, black beans, and corn.
