Ingredients
4 boneless, skinless chicken breasts
1/4 cup fresh cilantro, chopped
2 limes, juiced
2 tablespoons olive oil
1 teaspoon cumin
Salt and pepper to taste
2 cups cooked rice
1 cup corn, cooked
1 cup black beans, rinsed and drained
1 avocado, sliced
Diced tomatoes for topping

Instructions
In a bowl, mix lime juice, olive oil, cumin, salt, and pepper.
Add chicken breasts to the marinade and let sit for 15 minutes.
While the chicken marinates, prepare the rice and other toppings.
Heat a skillet over medium-high heat and cook the marinated chicken for about 6-7 minutes on each side until cooked through.
Remove chicken from skillet and let rest for a few minutes before slicing.
In bowls, layer the rice, corn, black beans, sliced chicken, avocado, cilantro, and diced tomatoes.
