Ingredients

  • 2 large chicken breasts, sliced
  • 1 cup quinoa, rinsed
  • 1 cup chicken broth
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. In a medium pot, combine quinoa and chicken broth. Bring to a boil, then reduce heat and simmer for 15 minutes until cooked.
  2. In a bowl, mix olive oil, lime juice, garlic powder, cumin, salt, and pepper. Toss chicken slices in this marinade and set aside for 10 minutes.
  3. Heat a skillet over medium-high heat and cook the marinated chicken for 5-7 minutes until fully cooked.
  4. Assemble the bowls by layering quinoa, corn, peppers, chicken, avocado, cherry tomatoes, and cilantro.
  5. Drizzle with extra lime juice before serving.

Notes

  1. You can add more vegetables like black beans or sautéed zucchini for extra nutrition.
