Description

A rich and creamy classic Italian dessert with a delightful coffee flavor that is easy to prepare and perfect for impressing guests.

Ingredients

  • 16 oz Mascarpone cheese, cold from the fridge
  • 4 egg yolks
  • 2/3 cup granulated or caster sugar
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 1/2 cup heavy cream, chilled or 4 egg whites
  • 30-36 ladyfingers
  • 1 1/2 cup strong black coffee, room temperature
  • 2 tbsp cocoa powder, to dust

Instructions

  1. 1. In a large bowl, whisk together the egg yolks and sugar until light and creamy. Add vanilla and salt, then mix well.
  2. 2. In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold it into the egg mixture until well combined.
  3. 3. Add the cold Mascarpone cheese and mix until smooth.
  4. 4. For the egg white option, whisk the egg yolks and sugar together until creamy. Beat the egg whites until stiff peaks form, then gently fold them into the yolk mixture, followed by the cold Mascarpone cheese.
  5. 5. Dip the ladyfingers quickly into the strong black coffee (do not soak), then arrange a layer in the bottom of a serving dish.
  6. 6. Spread half of the Mascarpone cream over the ladyfingers, then repeat with another layer of dipped ladyfingers and the remaining Mascarpone cream.
  7. 7. Cover and refrigerate for at least 4 hours or overnight for best flavor. Before serving, dust the top with cocoa powder.
