A bright, protein-packed twist on taco night, combining roasted sweet potatoes, seasoned ground beef, creamy cottage cheese, and avocado.
Ingredients
2 large sweet potatoes, diced
Avocado oil spray (or a light coating of any high-heat oil)
½ tsp salt (for potatoes)
½ tsp paprika (for potatoes)
½ tsp garlic powder (for potatoes)
1 lb grass-fed ground beef
¾ tsp salt (for beef)
1 tsp paprika (for beef)
1 tsp chili powder (for beef)
1 tsp garlic powder (for beef)
1 tsp onion powder (for beef)
1 large avocado, sliced or diced
16 oz 2% cottage cheese (about ½ cup per bowl)

Instructions
1. Prep your ingredients: Wash and dice the sweet potatoes into roughly 1-inch cubes and set aside the avocado.
2. Toss the diced sweet potatoes with a light spray of avocado oil and season with ½ tsp salt, ½ tsp paprika, and ½ tsp garlic powder.
3. Air fry the sweet potatoes at 400°F (204°C) for about 12–18 minutes, shaking the basket every 6 minutes.
4. While the potatoes roast, heat a skillet over medium-high heat and cook the ground beef, seasoning it with the remaining spices, until browned (about 6–8 minutes).
5. If necessary, drain excess fat from the beef and let both the beef and roasted sweet potatoes rest for a few minutes.
6. In each bowl, layer ½ cup of cottage cheese, topped with sweet potatoes, ground beef, and sliced avocado. Optionally, add smoked paprika, cilantro, lime, or jalapeños.
