A deliciously impressive yet easy chicken dish stuffed with spinach, cranberries, and creamy brie cheese.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup fresh spinach, packed
  • 1/2 cup dried cranberries
  • 4 oz brie cheese, rind optional
  • 1 tbsp olive oil
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 tsp dried thyme
  • 1/2 tsp salt, adjust to taste
  • 1/4 tsp black pepper
  • 1/2 tsp paprika

Instructions

  1. 1. Preheat oven to 375°F.
  2. 2. Heat olive oil in a skillet over medium heat.
  3. 3. Sauté onion until translucent, about 3-4 minutes.
  4. 4. Add garlic and cook for 1 more minute.
  5. 5. Add spinach and cranberries; cook until spinach wilts, about 1-2 minutes.
  6. 6. Season with salt and pepper, then let cool slightly.
  7. 7. Butterfly the chicken breasts by slicing them almost all the way through.
  8. 8. Season chicken with salt, pepper, and paprika.
  9. 9. Fill chicken with spinach mixture and add a slice of brie on top.
  10. 10. Secure with toothpicks or twine.
  11. 11. Sear stuffed chicken in a skillet over medium-high heat for 3-4 minutes per side.
  12. 12. Transfer skillet to oven and bake covered with foil for 25-30 minutes.
