Description

Ingredients

  • 1 lb chicken breast, diced
  • 1 tablespoon Cajun seasoning
  • 1 bell pepper, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped parsley for garnish

Instructions

  1. 1. Dice the chicken into bite-sized pieces.
  2. 2. Chop the onion and bell pepper, and mince the garlic.
  3. 3. Heat olive oil over medium heat, add onion and bell pepper, and sauté for 5–7 minutes until softened.
  4. 4. Stir in garlic and Cajun seasoning for 1 minute until fragrant.
  5. 5. Add diced chicken and cook until no longer pink, about 6–8 minutes.
  6. 6. Pour in chicken broth and bring to a simmer; cook for 5–10 minutes.
  7. 7. Stir in heavy cream and simmer for another 10–15 minutes without boiling.
  8. 8. Season with salt and pepper to taste, garnish with parsley, and serve hot.
