Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 stalks celery, diced
  • 2 carrots, diced
  • 2 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon chicken bouillon powder
  • Salt and pepper to taste
  • 2 cups cooked chicken, diced
  • Chopped parsley for garnish

Instructions

  1. 1. Cook the orzo according to package directions, typically 8-10 minutes until al dente. Drain and set aside.
  2. 2. In a large skillet, heat butter and olive oil over medium-high heat. Sauté onion, celery, and carrots for about 4-5 minutes.
  3. 3. Lower the heat and add flour to create a roux, cooking for 2-3 minutes.
