Ingredients
1 lb chicken breast
1 cup sliced mushrooms
1 medium onion, diced
2 cups chicken broth
1 cup sour cream
3 tablespoons flour
1 teaspoon garlic powder
2 tablespoons olive oil
Salt to taste
Pepper to taste
Fresh parsley, optional

Instructions
1. Heat 2 tablespoons of olive oil over medium heat in a large skillet.
2. Add the chicken pieces, season with salt and pepper, and sauté for about 5 to 7 minutes until golden brown.
3. Remove the chicken and set aside.
4. In the same skillet, add the diced onion and sliced mushrooms. Cook over medium heat for 5 to 6 minutes until browned and translucent.
5. Sprinkle 3 tablespoons of flour over the vegetable mixture, stirring well to combine and cook for 1 to 2 minutes.
6. Gradually pour in 2 cups of chicken broth while stirring continuously for 3 to 4 minutes until the sauce thickens slightly.
7. Reduce heat to low and stir in 1 cup of sour cream and 1 teaspoon of garlic powder. Mix thoroughly.
8. Return the chicken to the skillet and stir it into the sauce to coat. Heat through for an additional 2 to 3 minutes.
9. Serve the Creamy Chicken Stroganoff over mashed potatoes or egg noodles, garnished with fresh parsley if desired.
