Description

A comforting and creamy soup with ground beef, beans, and a hint of spice, perfect for quick weeknight meals.

Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can corn, drained
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. 1. In a large pot, brown the ground beef over medium heat. Add the diced onion and minced garlic and sauté until the onion is translucent.
  2. 2. Stir in the corn, black beans, diced tomatoes, beef broth, chili powder, cumin, salt, and pepper. Bring to a boil.
  3. 3. Reduce heat and let it simmer for about 20 minutes.
  4. 4. Stir in the heavy cream and allow it to heat through.
  5. 5. Serve warm, garnished with chopped green onions.
