Instructions
1. Preheat your oven to 375°F and grease a 9×13-inch baking dish with butter or nonstick spray. Set aside.
2. In a small saucepan, whisk the cornstarch into the heavy cream over medium-low heat. Add the butter, garlic, thyme, and a sprinkle of salt and pepper. Cook until the butter melts and the cream is warm, just before bubbling. Remove from heat.
3. Arrange the sweet potato slices in the prepared baking dish. Pour the creamy mixture over the top, ensuring it covers everything evenly.
4. Bake in the oven for 30 minutes. After this, sprinkle the parmesan on top and bake for another 10 minutes, or until the cheese is melted and golden.
