Ingredients

  • 1 cup long-grain rice
  • 4 cloves garlic, minced
  • 1/2 cup Parmesan cheese, freshly grated
  • 2 tablespoons butter
  • 2 cups chicken broth
  • 2 tablespoons fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. 1. Rinse the rice under cold water until the water runs clear and set aside to drain.
  2. 2. Melt butter in a medium saucepan over medium heat. Add minced garlic and sauté for 1–2 minutes until fragrant and golden.
  3. 3. Add rinsed rice to the saucepan and stir to coat in the butter. Toast for 2–3 minutes until slightly translucent.
  4. 4. Pour in chicken broth, add salt and pepper, and bring to a boil over high heat.
  5. 5. Once boiling, reduce heat to low, cover, and simmer for 15–18 minutes until tender.
  6. 6. Remove from heat and let sit covered for 5 minutes. Fluff the rice with a fork.
  7. 7. Stir in Parmesan cheese and parsley until well combined. Garnish with additional Parmesan and parsley if desired.
  8. 8. Serve warm and enjoy!
