Description

Ingredients
2 boneless, skinless chicken breasts
2 tablespoons honey
2 tablespoons fresh lime juice
Zest of 1 lime
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper, to taste
2 cups cooked rice (white or brown)
1 tablespoon lime juice
1 tablespoon chopped cilantro
Salt, to taste
1-2 ripe avocados, mashed
Juice of 1/2 lime
Salt and pepper, to taste
Lime wedges, for serving
Extra cilantro, for garnish
Cherry tomatoes, sliced (optional)

Instructions
1. Marinate the chicken in honey, lime juice, lime zest, olive oil, garlic, chili powder, cumin, paprika, salt, and pepper for at least 15 to 30 minutes in the fridge.
2. Heat a skillet over medium high heat and sear the marinated chicken for 2 to 3 minutes undisturbed.
3. Flip the chicken and continue cooking for 6 to 8 minutes more until the internal temperature reaches 165 F.
4. Fluff the cooked rice with a fork and stir in lime juice, chopped cilantro, and a pinch of salt.
5. Mash the ripe avocados with lime juice, salt, and pepper until smooth but still textured.
6. Assemble the stack by layering rice, avocado mixture, and topping with the seared chicken.
7. Garnish with lime wedges, extra cilantro, and sliced cherry tomatoes if desired.
