Ingredients
4 boneless skinless chicken thighs
2 cups buttermilk
1 tablespoon Cajun seasoning
1.5 cups all-purpose flour
2 tablespoons Cajun seasoning
1 teaspoon baking powder
1 teaspoon garlic powder
1 teaspoon paprika
Salt and black pepper to taste
Vegetable oil for frying
1/2 cup mayonnaise
2 cloves garlic, minced or 1 teaspoon roasted garlic
1 tablespoon lemon juice
1 teaspoon olive oil
1 tablespoon grated Parmesan cheese (optional)
4 hamburger buns
Lettuce leaves
Tomato slices

Instructions
1. In a large bowl, combine buttermilk and 1 tablespoon Cajun seasoning. Whisk briefly, then add chicken, cover, and refrigerate for 2 to 4 hours.
2. In a bowl, whisk together mayonnaise, minced garlic, lemon juice, olive oil, and Parmesan cheese (if using); season with salt and pepper to taste and chill.
3. In a shallow dish, combine all-purpose flour, 2 tablespoons Cajun seasoning, baking powder, garlic powder, paprika, salt, and pepper. Whisk to combine.
4. Heat about 3 inches of vegetable oil in a Dutch oven or heavy-bottomed pan to 375°F (190°C).
5. Remove brined chicken, let excess drip off, and dredge in the flour mixture. Fry chicken for 3 to 4 minutes per side until golden brown and internal temperature reaches 165°F (74°C). Drain on a wire rack.
6. Toast the hamburger buns, spread a generous amount of garlic aioli on both buns, layer with lettuce, fried chicken, tomato slices, and pickles. Serve immediately.
