Description
Deliciously crispy baby potatoes coated with Parmesan and breadcrumbs, baked to perfection.
Ingredients
2 pounds baby potatoes
1 cup grated Parmesan cheese
1/2 cup breadcrumbs
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon dried oregano
Salt and pepper to taste
Fresh parsley for garnish (optional)

Instructions
1. Preheat the oven to 400°F (200°C).
2. Cut the baby potatoes in half and place them in a large bowl.
3. In a separate bowl, mix together the Parmesan cheese, breadcrumbs, garlic powder, oregano, salt, and pepper.
4. Drizzle the olive oil over the potatoes and toss to coat.
5. Add the cheese and breadcrumb mixture to the potatoes and toss until evenly coated.
6. Spread the potatoes on a baking sheet lined with parchment paper.
7. Bake for 25-30 minutes, or until golden and crispy, flipping halfway through.
8. Garnish with fresh parsley if desired and serve warm.
