  • 2 cups fresh spinach
  • 1/2 cup sun-dried tomatoes, sliced
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Bring a large pot of salted water to a gentle boil. Add the gnocchi and cook according to the package instructions (about 2–4 minutes). Drain the gnocchi and let sit to release steam.
  2. 2. In a large skillet, heat olive oil over medium heat until shimmering. Add the drained gnocchi in a single layer and sauté undisturbed for 5–7 minutes until golden and crispy.
  3. 3. Add spinach and sun-dried tomatoes to the skillet. Stir and cook until the spinach wilts (about 2–3 minutes).
  4. 4. Remove from heat, stir in crumbled feta cheese, and season with salt and pepper. Serve warm.
