Description

A comforting, golden chicken breast with a savory Parmesan crust that is simple yet special.

Ingredients

  • 2 tablespoons extra virgin olive oil
  • 1 clove fresh garlic, finely minced
  • 1 cup seasoned bread crumbs (dry)
  • 2/3 cup freshly grated Parmesan cheese
  • 1 teaspoon dried basil
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. 1. Pound the chicken breasts to an even thickness, about 1/2 inch.
  2. 2. Season both sides with salt and black pepper.
  3. 3. Set up three shallow bowls: Bowl 1 for flour, Bowl 2 for beaten eggs, Bowl 3 for breadcrumbs mixed with Parmesan, garlic powder, and herbs.
  4. 4. Dredge each chicken breast in flour, dip in egg wash, then press into the breadcrumb-Parmesan mixture.
  5. 5. Heat a skillet over medium heat, add 3 tablespoons of olive oil.
  6. 6. Cook the coated chicken for 4–5 minutes on each side until golden and cooked through at 165°F (74°C).
  7. 7. Remove from skillet and let rest for 2–3 minutes before slicing. Serve immediately.
