Ingredients

  • 2 medium zucchinis, grated
  • 1 cup Greek yogurt
  • ½ cup flour (regular or almond)
  • 2 eggs
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon fresh herbs (dill or parsley)

Instructions

  1. 1. Grate the zucchini and squeeze out the excess moisture using a clean kitchen towel.
  2. 2. In a large mixing bowl, combine the drained zucchini with yogurt, flour, eggs, garlic powder, salt, black pepper, and herbs.
