Description

A delicious, tropical meal of tender chicken cooked in a creamy coconut-lime sauce, perfect for busy weeknights.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 can (13.5 oz) coconut milk
  • 1/4 cup lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped
  • Jasmine rice, for serving

Instructions

  1. 1. Place chicken breasts in the crockpot.
  2. 2. In a mixing bowl, combine coconut milk, lime juice, garlic, ginger, salt, and pepper.
  3. 3. Pour the mixture over the chicken.
  4. 4. Cover and cook on low for 360 minutes (6 hours) or high for 240 minutes (4 hours) until the chicken is tender.
  5. 5. Shred the chicken with two forks and stir it back into the sauce.
  6. 6. Serve over jasmine rice, topped with fresh cilantro.
