Description

A comforting and simple dish with kielbasa, fresh green beans, and baby potatoes cooked slowly in a crockpot.

Ingredients

  • 1 to 1½ pounds kielbasa, sliced into rounds (or turkey sausage)
  • 1½ pounds baby potatoes, halved
  • 1 pound fresh green beans, trimmed
  • 1 medium onion, sliced
  • 3–4 garlic cloves, minced
  • 1½ cups low sodium chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: ½ teaspoon smoked paprika or Cajun seasoning

Instructions

  1. 1. Wash and halve the baby potatoes.
  2. 2. Slice the kielbasa into rounds.
  3. 3. Trim the green beans and slice the onion.
  4. 4. Mince the garlic.
  5. 5. Add the baby potatoes to the bottom of the crockpot.
  6. 6. Layer the green beans, onion, garlic, and kielbasa on top of the potatoes.
  7. 7. Pour in the chicken broth and drizzle with olive oil.
  8. 8. Sprinkle with salt, pepper, and any additional seasonings.
  9. 9. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours, until the potatoes are fork-tender.
  10. 10. Gently mix before serving to distribute flavors evenly.
  11. 11. Spoon the dish into bowls and enjoy warm.
