Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup cocoa powder
  • 1 cup sugar
  • 1/2 cup butter, softened
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • 1 cup fresh raspberries
  • 1/2 cup dark chocolate, chopped
  • 1/2 cup powdered sugar

Instructions

  1. 1. Preheat the oven to 350°F (175°C). Grease and flour a cake pan.
  2. 2. In a mixing bowl, cream together the butter and sugar until light and fluffy.
  3. 3. Add eggs one at a time, beating well after each addition. Mix in the milk and vanilla.
  4. 4. In another bowl, sift together the flour and cocoa powder. Gradually add the dry ingredients to the wet mixture.
  5. 5. Pour the batter into the prepared cake pan and bake for 25-30 minutes. Allow to cool.
  6. 6. For the raspberry mousse, beat the heavy cream until soft peaks form. Gently fold in the raspberries and powdered sugar.
  7. 7. Once the cake is cool, slice it in half and spread the raspberry mousse between the layers.
  8. 8. Melt the dark chocolate and pour it over the top of the cake, letting it drip down the sides.
  9. 9. Chill in the refrigerator for at least 2 hours.
