Description

Ingredients
12 ounces Italian sausage
1 tablespoon olive oil
1 medium onion, diced
2 to 3 celery stalks, chopped
4 to 5 cloves garlic, minced
1 large sweet potato, peeled and cubed
1 tablespoon tomato paste
6 cups chicken broth
1 can (14.5 ounces) diced tomatoes
1 tablespoon Italian seasoning
1/4 teaspoon red pepper flakes (optional)
9 ounces cheese tortellini
3 to 4 cups fresh spinach or kale
1/2 cup heavy cream
1/2 cup grated Parmesan cheese
Salt and pepper to taste
Fresh basil or parsley for garnish

Instructions
1. Heat the olive oil over medium heat in a large pot. Crumble the sausage into the pot and cook until browned, about 5-7 minutes. Drain excess grease and set aside.
2. Add the diced onion and chopped celery to the pot. Cook for 4-5 minutes until softened, then add minced garlic and cook for 1 more minute.
3. Add cubed sweet potato, tomato paste, diced tomatoes, chicken broth, and Italian seasoning. Stir in red pepper flakes if using and return the sausage to the pot.
4. Bring the soup to a boil, then reduce heat and let simmer covered for 15 minutes or until vegetables are tender.
5. Add tortellini to the pot and cook according to package directions, about 3-7 minutes.
6. Stir in fresh spinach or kale until wilted. Add heavy cream and Parmesan cheese, stir gently, and remove from heat. Adjust seasoning with salt and pepper.
7. Ladle the soup into bowls and garnish with fresh basil or parsley and extra Parmesan. Serve hot.
