Ingredients

  • 2 1/2 cups all-purpose flour
  • 2 tablespoons sugar (for dough)
  • 1/2 teaspoon salt (for dough)
  • 1 cup unsalted butter (very cold, sliced)
  • 3 tablespoons sour cream (very cold)
  • 1/2 cup ice-cold water
  • 3 tablespoons all-purpose flour (for filling)
  • 3/4 cup sugar (for filling)
  • Juice and zest of 1 lemon
  • 1/4 teaspoon salt (for filling)
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon cloves
  • 2 teaspoons cinnamon
  • 1/4 teaspoon allspice
  • 3 pounds apples (about 7 medium-sized, peeled and sliced)
  • 1 egg
  • 1/2 teaspoon water

Instructions

  1. 1. In a large bowl, whisk together the flour, sugar, and salt for the dough.
  2. 2. Cut the very cold butter into the flour mixture until it resembles coarse crumbs.
  3. 3. Add sour cream and cold water, mixing gently until the dough just begins to come together.
  4. 4. Divide the dough into two equal portions, wrap, and refrigerate for at least 30 minutes.
  5. 5. Preheat the oven to 425°F and place a baking sheet inside to preheat.
  6. 6. Peel and slice the apples, alternating between 1/3 inch and 1/4 inch thickness.
  7. 7. Toss sliced apples with flour, sugar, lemon juice, salt, and spices until well coated.
  8. 8. Roll one chilled dough half into a 12-inch circle and place it in a 9-inch pie dish.
  9. 9. Add the apple filling into the prepared crust.
  10. 10. Roll out the second dough half, cover the filling, and seal the edges.
  11. 11. Brush the top crust with an egg wash and create vents.
  12. 12. Bake at 425°F for 25 minutes, then reduce temperature to 375°F and bake for an additional 35 minutes.
