Instructions

  1. 1. In a large bowl, whisk together flour, sugar, and salt for the crust.
  2. 2. Add cold butter and cut into the flour until the mixture resembles coarse crumbs.
  3. 3. Mix in sour cream and ice-cold water until dough just comes together. Divide into two portions, flatten into disks, wrap, and refrigerate for 30 minutes.
  4. 4. Preheat oven to 425°F (220°C). Prepare a large baking sheet to place in the oven.
  5. 5. Peel and slice apples, alternating thickness, then toss with flour, sugar, lemon juice and zest, and spices.
  6. 6. Roll out one disk of dough into a 12-inch circle and place in a pie dish. Fill with apple mixture, placing it higher in the center.
  7. 7. Roll out the second dough disk, cover the pie, trim excess, and crimp edges. Brush with egg wash and cut vents.
  8. 8. Bake at 425°F for 25 minutes, then reduce temperature to 375°F (190°C) and bake for an additional 35 minutes.
  9. 9. Cool completely on a wire rack before slicing.
