Ingredients
1 cup all-purpose flour
2 teaspoons aluminum-free baking powder
1 tablespoon sugar
1 cup milk
2 large eggs
1 teaspoon vanilla extract
2 tablespoons melted butter

Instructions
1. Whisk the eggs in a medium bowl. Add the milk, vanilla, and melted butter, stirring to combine.
2. In a separate large bowl, sift together the flour, baking powder, and sugar. Make a well in the dry ingredients and pour in the wet mixture. Gently whisk the batter until just combined and let rest for 5 minutes.
3. Heat a non-stick pan or griddle over medium-high heat and lightly grease it. Pour about 1/2 to 1 cup of batter onto the hot surface, forming small pancakes and cook until a light crust forms on the bottom.
4. Using a silicone spatula, gently fold the pancake over and break it into bite-sized pieces, making sure uncooked batter flows out to cook evenly.
