Description
A creamy and cheesy shrimp and grits casserole that’s quick to make and perfect for any occasion.
Ingredients
4 cups chicken broth
2 cups water
1 cup quick-cooking grits
1 cup heavy cream
2 cups shredded sharp cheddar cheese
2 tablespoons butter
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1 medium onion, chopped
1 bell pepper, chopped
2 cloves garlic, minced
1 pound raw shrimp, peeled and deveined
1 tablespoon Cajun seasoning
1 teaspoon paprika

Instructions
1. Preheat your oven to 350°F and grease a 9 by 13 inch casserole dish.
2. In a large saucepan, bring the chicken broth and water to a boil. Gradually whisk in the grits and reduce the heat. Simmer for 5 minutes while stirring frequently until thickened.
3. Remove the grits from the heat and stir in the heavy cream, butter, 1 and 1/2 cup of the shredded cheese, salt, and pepper until smooth and creamy.
4. In a skillet, heat the olive oil over medium heat. Sauté the onion, bell pepper, and garlic until softened.
5. Add the shrimp, Cajun seasoning, and paprika to the skillet. Cook for 3 to 4 minutes, or until the shrimp are pink and cooked through.
6. Fold the shrimp mixture into the creamy grits, ensuring the flavors are well combined.
7. Transfer the Shrimp and Grits Casserole mixture to the prepared baking dish and top with the remaining cheese.
8. Bake the casserole for 25 to 30 minutes, or until it is bubbly and the cheese is golden brown.
9. Allow the casserole to cool for 10 minutes before serving.
