Description

A quick and easy bake featuring taco flavors in a comforting casserole form, perfect for busy weeknights.

Ingredients

  • 2 cups taco sauce
  • ½ cup water
  • 1 can (15 ounces) diced tomatoes (undrained)
  • 1 tablespoon taco seasoning
  • 1 cup uncooked long grain white rice
  • 24 bite-sized frozen turkey meatballs (about 340 grams), thawed
  • 1 cup (4 ounces) shredded Cheddar cheese
  • Optional toppings: sliced green onion, diced avocado, sliced tomatoes, sliced olives

Instructions

  1. 1. Preheat your oven to 375°F (190°C). Spray a 13 x 9-inch baking dish with cooking spray.
  2. 2. In the prepared baking dish, stir together the taco sauce, water, diced tomatoes (undrained), taco seasoning, and uncooked long grain white rice.
  3. 3. Add the thawed turkey meatballs to the dish and stir gently to combine.
  4. 4. Stir in ½ cup of the shredded Cheddar cheese.
  5. 5. Cover the baking dish tightly with foil and bake for 30-40 minutes, or until the rice is tender and most of the liquid has been absorbed.
  6. 6. Remove the foil and sprinkle the remaining ½ cup of shredded Cheddar cheese over the casserole.
  7. 7. Return to the oven, uncovered, and bake for another 5-10 minutes, or until the cheese is melted and bubbly.
  8. 8. Let the casserole stand for a few minutes before serving. Garnish it with optional toppings if desired.
