Description

A comforting, hearty chicken noodle soup perfect for chilly days, packed with veggies and easy to prepare.

Ingredients

  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 8 cups chicken broth
  • 2 cups cooked chicken, shredded
  • 1 teaspoon dried thyme
  • 1 teaspoon dried parsley
  • Salt and pepper to taste
  • 2 cups egg noodles
  • Optional: fresh parsley for garnish

Instructions

  1. 1. In a large pot, heat the olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened, about 5 minutes.
  2. 2. Stir in the garlic and cook for another minute.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the shredded chicken, thyme, parsley, salt, and pepper.
  5. 5. Once boiling, add the egg noodles and cook according to package instructions until tender.
  6. 6. Taste and adjust seasoning if necessary.
  7. 7. Serve hot, garnished with fresh parsley if desired.
