Description

A warm, friendly riff on a classic dish, Easy Chicken Stroganoff combines tender chicken with earthy mushrooms and a tangy sour cream sauce for a comforting weeknight meal.

Ingredients

  • 2 boneless skinless chicken breasts (about 1 lb), cut into 1-inch pieces
  • 1/4 cup all-purpose flour, for dredging
  • 3 tablespoons olive oil (divided)
  • 1 tablespoon unsalted butter
  • 8 oz cremini mushrooms, sliced
  • 1 small yellow onion, chopped
  • 1 teaspoon dry mustard
  • 1 tablespoon Worcestershire sauce
  • 2–3 cloves garlic, minced
  • 1 cup chicken broth
  • 1/2 cup sour cream
  • Kosher salt and freshly ground black pepper, to taste
  • Egg noodles, for serving

Instructions

  1. 1. Prep Chicken: Pat the chicken dry, cut into pieces, and season with salt and pepper. Dredge in flour.
  2. 2. Brown Chicken: Heat 2 tbsp olive oil in a skillet, cook chicken until golden on both sides. Remove and set aside.
  3. 3. Cook Vegetables: Add remaining oil and butter, then mushrooms and onions. Cook until softened.
  4. 4. Build Sauce Base: Stir in mustard, Worcestershire sauce, and garlic; cook until fragrant.
  5. 5. Deglaze: Add chicken broth and scrape up browned bits from the pan.
  6. 6. Simmer: Return chicken to the skillet, simmer for 5-7 minutes until cooked through.
  7. 7. Finish Sauce: Stir in sour cream, season to taste, and avoid boiling.
  8. 8. Serve: Spoon over cooked noodles, mashed potatoes, or rice, garnish as desired.
