A delightful dish combining the sweetness of coconut with savory shrimp, perfect for quick dinners or party appetizers.

Ingredients

  • 3/4 cup all-purpose flour
  • 3/4 cup + 2 tbsp water
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 10 shrimp (peeled and deveined, with the tail on)
  • 1 cup shredded/grated coconut
  • 3/4 cup panko crumbs
  • Sweet chili sauce for serving

Instructions

  1. 1. Mix all the ingredients listed for the batter until well combined.
  2. 2. Mix the panko crumbs and coconut together until well combined.
  3. 3. Hold the shrimp by the tail, dip it into the batter, and then coat it with the panko coconut mixture. Repeat this process for all the shrimp.
  4. 4. Heat oil over medium heat and fry the shrimp in batches until golden brown and crispy, about 2-3 minutes.
  5. 5. Let the fried shrimp rest on a baking rack for a few minutes to drain the oil and optionally season with salt while hot.
  6. 6. Serve with sweet chili sauce and enjoy!
