Description

A simple one-pan dinner featuring juicy chicken breasts roasted with golden, garlicky potatoes topped with crispy Parmesan.

Ingredients

  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried herbs (such as oregano, thyme, or basil)
  • Salt and pepper to taste

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. In a large bowl, toss the diced potatoes with olive oil, minced garlic, dried herbs, salt, and pepper. Spread the potatoes in a single layer on a baking sheet.
  3. 3. Season the chicken breasts with salt, pepper, and half of the Parmesan cheese. Arrange the seasoned chicken on the baking sheet with the potatoes.
  4. 4. Sprinkle the remaining Parmesan cheese over the chicken and potatoes.
  5. 5. Bake in the preheated oven for 25–30 minutes, or until the chicken is cooked through and the potatoes are golden and tender.
