Ingredients

  • 12 ounces green beans, trimmed
  • 12 ounces carrots, peeled and cut into 3-inch sticks
  • 2 tablespoons olive oil
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and pepper, to taste

Instructions

  1. 1. Preheat your oven to 400°F and line a large rimmed baking sheet with parchment paper.
  2. 2. Wash and thoroughly dry the green beans and carrots. Trim the green beans and cut the carrots into 3-inch sticks.
  3. 3. Toss the vegetables with olive oil, tarragon, thyme, garlic powder, and red pepper flakes in a large bowl. Season with salt and pepper.
  4. 4. Spread the vegetables in a single layer on the prepared baking sheet.
  5. 5. Roast for 20-25 minutes, stirring once halfway through, until tender and starting to brown.
