Ingredients

  • 1 pound chicken breast, cubed
  • 1 cup pineapple, cubed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger, grated
  • Salt and pepper, to taste
  • 1/4 cup green onions, sliced
  • 1 tablespoon sesame seeds

Instructions

  1. 1. In a large skillet, heat the olive oil over medium heat. Add the cubed chicken and cook until golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet and set it aside.
  2. 2. In the same skillet, sauté the chopped onion, minced garlic, and diced red bell pepper until softened, about 5 minutes.
  3. 3. Add the cubed pineapple to the skillet and cook for an additional 2 minutes, allowing the pineapple to caramelize slightly.
  4. 4. Stir in the jasmine rice, chicken broth, soy sauce, grated ginger, salt, and pepper. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes, or until the rice is fully cooked.
