Description
A rustic artisan loaf featuring roasted garlic and fresh rosemary, perfect for soups, sandwiches, or sharing warm.
Ingredients
1 bulb garlic
1 tablespoon olive oil (for roasting the garlic)
1 teaspoon salt (for roasting the garlic)
3 cups all-purpose flour
1 1/2 teaspoon salt (for the dough)
1/2 teaspoon instant yeast
1 1/2 cups warm water
2 tablespoons fresh rosemary, chopped
1 tablespoon olive oil (for the dough)

Instructions
1. Preheat your oven to 400°F (200°C).
2. Trim the top off the garlic bulb, drizzle with olive oil, sprinkle with salt, and wrap in aluminum foil. Roast for about 40 minutes until soft.
3. In a bowl, whisk flour, salt, and yeast. Add warm water and stir to form a sticky dough.
4. Add roasted garlic and rosemary, mix, and drizzle with olive oil.
5. Cover with a cloth and let rise for 8-10 hours at room temperature until doubled in size.
6. Turn the dough out on a floured surface, shape into a round loaf.
7. Place shaped dough on parchment paper, let rise for 1-2 hours until puffy.
8. Preheat your oven to 450°F (230°C) with a Dutch oven inside.
9. Once hot, place the dough in the Dutch oven, score the top, cover, and bake for 30 minutes. Remove lid and bake for an additional 15-20 minutes until golden brown.
10. Cool on a wire rack for 30-60 minutes before slicing.
