Ingredients

  • 1 bulb garlic
  • 1 tablespoon olive oil (for roasting the garlic)
  • 1 teaspoon salt (for roasting the garlic)
  • 3 cups all-purpose flour
  • 1 1/2 teaspoon salt (for the dough)
  • 1/2 teaspoon instant yeast
  • 1 1/2 cups warm water
  • 2 tablespoons fresh rosemary, chopped
  • 1 tablespoon olive oil (for the dough)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Trim the top off the garlic bulb, drizzle with olive oil, sprinkle with salt, and wrap in aluminum foil. Roast for about 40 minutes until soft.
  3. 3. In a bowl, whisk flour, salt, and yeast. Add warm water and stir to form a sticky dough.
  4. 4. Add roasted garlic and rosemary, mix, and drizzle with olive oil.
  5. 5. Cover with a cloth and let rise for 8-10 hours at room temperature until doubled in size.
  6. 6. Turn the dough out on a floured surface, shape into a round loaf.
  7. 7. Place shaped dough on parchment paper, let rise for 1-2 hours until puffy.
  8. 8. Preheat your oven to 450°F (230°C) with a Dutch oven inside.
  9. 9. Once hot, place the dough in the Dutch oven, score the top, cover, and bake for 30 minutes. Remove lid and bake for an additional 15-20 minutes until golden brown.
  10. 10. Cool on a wire rack for 30-60 minutes before slicing.
