Feta and Tomato Spaghetti Squash

Description

A healthy and delicious dish featuring roasted spaghetti squash topped with creamy feta cheese and fresh cherry tomatoes.

Ingredients

  • 1 large spaghetti squash, split in half, seeds removed
  • 1 8-ounce block feta cheese
  • 1 cup cherry tomatoes, halved
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 4 tablespoons olive oil
  • ¼ cup chopped basil

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Brush the cut sides of the spaghetti squash with olive oil and season with salt and pepper. Place cut side down on a baking sheet.
  3. 3. Roast for about 30-40 minutes until the flesh is tender.
  4. 4. In a baking dish, combine feta cheese, halved cherry tomatoes, minced garlic, olive oil, salt, and pepper.
  5. 5. Once the squash is done, flip it over and add the feta mixture into the center.
  6. 6. Bake for an additional 20 minutes until the cheese is softened.
  7. 7. Remove from the oven, scrape the spaghetti squash with a fork to create strands, and mix in with the feta and tomatoes.
  8. 8. Top with chopped basil before serving. Enjoy!
