Description

Ingredients

  • 1 cup cottage cheese
  • 3 large eggs
  • 1/4 cup almond flour
  • 1/4 teaspoon baking powder
  • 1/2 cup fresh blueberries
  • 1 tablespoon honey or sweetener of choice (optional)
  • A pinch of salt

Instructions

  1. 1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. 2. In a bowl, blend the cottage cheese until smooth.
  3. 3. In a separate bowl, separate the egg whites and yolks. Whip the egg whites until stiff peaks form.
  4. 4. Add the egg yolks to the cottage cheese along with almond flour, baking powder, salt, and honey. Mix until well combined.
  5. 5. Gently fold the whipped egg whites into the cottage cheese mixture until just incorporated.
  6. 6. Fold in the blueberries carefully.
