Description

A quick and easy dish that combines fluffy omelette with flavorful fried rice, perfect for busy days or a satisfying lunch.

Ingredients

  • 2 cups cooked rice
  • 1 small carrot, diced
  • 1 small onion, diced
  • 1/2 cup peas
  • 2 tablespoons ketchup
  • 1 tablespoon soy sauce
  • 4 large eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. 1. In a pan, heat oil over medium heat.
  2. 2. Add diced onion and carrot, and sauté until softened.
  3. 3. Stir in peas and cooked rice, mixing well.
  4. 4. Add ketchup and soy sauce, season with salt and pepper, and cook for a few minutes.
  5. 5. In a separate bowl, beat the eggs with a pinch of salt.
  6. 6. Heat oil in a clean pan, pour in the eggs, and cook until they are just set.
  7. 7. Spoon the fried rice mixture onto one half of the omelette and fold the other half over.
  8. 8. Serve immediately.
