Ingredients

  • 4 large baking potatoes
  • 2 tablespoons butter
  • 2 large onions, thinly sliced
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • Salt and pepper to taste
  • 1 cup shredded Gruyère cheese
  • Olive oil for drizzling

Instructions

  1. 1. Preheat the oven to 400°F (200°C).
  2. 2. Wash the potatoes and prick them with a fork. Bake directly on the oven rack for 45 minutes.
  3. 3. In a skillet, melt butter over medium heat, add onions, and caramelize for 15-20 minutes. Season with thyme, salt, and pepper.
  4. 4. Remove baked potatoes, let cool, and cut in half lengthwise. Scoop out some flesh to create a pocket.
  5. 5. Mix the scooped potato flesh with caramelized onions and half of the Gruyère cheese.
  6. 6. Fill the potato skins with the onion and potato mixture.
  7. 7. Top with remaining Gruyère cheese and drizzle with olive oil.
  8. 8. Bake again for 10-15 minutes until the cheese is melted and golden.
  9. 9. Let cool slightly before serving and enjoy!
