Instructions
1. Preheat the oven to 160ºC (320ºF) with a fan or 170ºC (338ºF) for conventional heating. Line a baking tray with parchment paper.
2. In a heatproof bowl, combine chopped dark chocolate and butter. Melt over simmering water, stirring occasionally until fully combined, then stir in the vanilla.
3. In a medium bowl, use an electric whisk to beat the caster sugar, demerara sugar, and eggs until light, thick, and fluffy (about 5 minutes).
4. In another bowl, sift together flour, cocoa powder, baking powder, and salt. Add chocolate chips.
5. Gradually fold the melted chocolate mixture into the whipped eggs and sugars, stirring gently to maintain airiness.
6. Fold the dry ingredients into the wet ingredients with a spatula until just combined.
7. Scoop tablespoons of batter onto the prepared tray, spacing them well apart. Bake for 12-14 minutes until set and crackly on top.
8. Remove from the oven, sprinkle with sea salt if desired, and cool on the tray for about 10 minutes before transferring to a cooling rack.
