Ingredients

  • 1 cup orzo pasta
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 1/2 cup mushrooms, sliced
  • 2 cups fresh spinach, loosely packed
  • 1 cup chicken or vegetable broth
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste
  • Optional: a squeeze of lemon juice

Instructions

  1. 1. Bring a pot of salted water to a boil and cook the orzo according to the package directions until it is al dente. Drain and set aside.
  2. 2. In a large skillet over medium heat, melt the butter. Add the sliced mushrooms and cook until browned. Then toss in the minced garlic and sauté for about 1 minute.
  3. 3. Pour in the broth and stir, allowing it to come to a gentle simmer. Add the fresh spinach and cook until just wilted.
  4. 4. Add the cooked orzo to the skillet and stir until well combined. Sprinkle in the grated Parmesan cheese and mix until melted.
