Description

A simple yet scrumptious dish of roasted potatoes infused with garlic and butter, perfect as a comforting side.

Ingredients

  • 2 pounds Yukon Gold or Russet potatoes
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. 1. Preheat your oven to 400°F (200°C).
  2. 2. Rinse and scrub the potatoes; peel or leave skin on, and cut into 1-2 inch chunks.
  3. 3. In a mixing bowl, combine melted butter, minced garlic, olive oil, rosemary, salt, and pepper.
  4. 4. Add potato chunks to the bowl and toss to coat in the garlic butter mixture.
  5. 5. Line a baking sheet with parchment paper or grease it lightly.
  6. 6. Spread potatoes in a single layer on the baking sheet.
  7. 7. Bake for 25-30 minutes or until golden brown, flipping halfway through.
  8. 8. Garnish with fresh parsley and serve hot.
