Ingredients

  • 1 1/2 pounds sirloin steak, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoons unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. 1. Preheat the oven to 425°F.
  2. 2. In a large bowl, toss the halved baby potatoes with 2 tablespoons of melted butter, salt, and black pepper. Spread the seasoned potatoes onto a baking sheet.
  3. 3. Roast the potatoes in the preheated oven for 20 minutes, or until they’re slightly tender.
  4. 4. In a skillet over medium-high heat, melt the remaining 2 tablespoons of butter. Add the minced garlic, thyme, and rosemary. Sauté for 1 minute, then add the steak pieces and cook until browned.
  5. 5. Pour the steak mixture over the roasted potatoes on the baking sheet. Toss everything together and bake for an additional 15 minutes.
  6. 6. Remove the dish from the oven, sprinkle with fresh chopped parsley, and serve hot.
