Ingredients

  • 1 1/2 pound sirloin steak, cut into bite-sized pieces
  • 1 pound baby potatoes, halved
  • 4 tablespoon unsalted butter
  • 4 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh parsley, chopped

Instructions

  1. 1. Preheat the oven to 425°F. Ensure the rack is in the middle.
  2. 2. Toss halved baby potatoes with 2 tablespoon of melted butter, salt, and black pepper in a large bowl.
  3. 3. Spread the seasoned potatoes in a single layer on a baking sheet.
  4. 4. Roast for 20 minutes or until slightly tender and starting to brown.
  5. 5. In a skillet, melt the remaining 2 tablespoon of butter over medium-high heat. Add minced garlic, thyme, and rosemary, and sauté for 1 minute.
  6. 6. Add the steak pieces to the skillet and cook until browned on the outside, working in batches if needed.
