Description

Bright, garlicky, and irresistibly savory, these skewers combine juicy chicken with melted butter infused with garlic and a shower of salty Parmesan for a crowd-pleasing meal.

Ingredients

  • 1–1½ lb chicken breasts, cubed (or thighs)
  • 3 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1–2 tsp no salt added lemon pepper seasoning
  • ½ tsp salt
  • ¼ cup lemon juice
  • 4–6 Tbsp butter
  • 3 cloves garlic, minced
  • ¼ cup Parmesan, grated
  • 2 tsp lemon juice (optional)
  • 3 Tbsp fresh parsley, chopped
  • 1 small lemon, sliced for garnish (optional)

Instructions

  1. 1. Prepare the chicken by trimming excess fat and cutting into even cubes.
  2. 2. In a bowl, marinate the chicken with olive oil, lemon juice, spices, and salt for 15 minutes to 4 hours.
  3. 3. If using wooden skewers, soak them for 20–30 minutes. Skewer the chicken evenly.
  4. 4. In a saucepan, melt the butter and add minced garlic to simmer for about 2 minutes. Keep warm.
  5. 5. Preheat the grill to medium-high heat and oil the grates.
  6. 6. Grill the skewers for 8–10 minutes, turning frequently, and brush with garlic butter.
  7. 7. After removing from grill, brush skewers with garlic-Parmesan mixture.
  8. 8. Let the skewers rest briefly, then serve with fresh lemon and parsley.
