Bright, garlicky, and irresistibly savory, these skewers combine juicy chicken with melted butter infused with garlic and a shower of salty Parmesan for a crowd-pleasing meal.
Ingredients
1–1½ lb chicken breasts, cubed (or thighs)
3 Tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1–2 tsp no salt added lemon pepper seasoning
½ tsp salt
¼ cup lemon juice
4–6 Tbsp butter
3 cloves garlic, minced
¼ cup Parmesan, grated
2 tsp lemon juice (optional)
3 Tbsp fresh parsley, chopped
1 small lemon, sliced for garnish (optional)

Instructions
1. Prepare the chicken by trimming excess fat and cutting into even cubes.
2. In a bowl, marinate the chicken with olive oil, lemon juice, spices, and salt for 15 minutes to 4 hours.
3. If using wooden skewers, soak them for 20–30 minutes. Skewer the chicken evenly.
4. In a saucepan, melt the butter and add minced garlic to simmer for about 2 minutes. Keep warm.
5. Preheat the grill to medium-high heat and oil the grates.
6. Grill the skewers for 8–10 minutes, turning frequently, and brush with garlic butter.
7. After removing from grill, brush skewers with garlic-Parmesan mixture.
8. Let the skewers rest briefly, then serve with fresh lemon and parsley.
