Easy and flavorful chicken skewers marinated in lemon and spices, grilled to perfection and finished with a garlic-butter and Parmesan glaze.
Ingredients
1–1½ lb chicken breasts (cubed, or thighs)
3 Tbsp olive oil
1 tsp paprika
1 tsp garlic powder
1 tsp onion powder
1–2 tsp no salt added lemon pepper seasoning
½ tsp salt
¼ cup lemon juice
4–6 Tbsp butter
3 cloves garlic (minced)
¼ cup Parmesan (grated)
2 tsp lemon juice (optional)
3 Tbsp fresh parsley (chopped; fresh cilantro will also work)
1 small lemon (sliced for garnish, optional)

Instructions
1. Prepare the chicken: Cut chicken breasts or thighs into evenly sized 1–1½‑inch cubes and place into a large mixing bowl.
2. Marinate: Add olive oil, lemon juice, paprika, garlic powder, onion powder, lemon pepper seasoning, and salt. Mix thoroughly, cover with plastic wrap, and marinate in the refrigerator for 15 minutes to 4 hours.
3. Skewer: Thread the marinated chicken onto skewers (wooden or metal) placed on a baking sheet.
4. Make the garlic-Parmesan butter: Melt butter in a saucepan over low heat, add minced garlic, and simmer gently for about 2 minutes. Remove from heat.
5. Grill: Preheat grill to medium/high (400°F). Grill skewers for about 8–10 minutes, turning often. Add Parmesan and parsley to garlic butter, stir to combine.
6. Baste and finish: Brush skewers with garlic-Parmesan butter while grilling for about 2 minutes per side until golden and fully cooked (165°F internally).
7. Rest and serve: Let skewers rest briefly, then brush with remaining garlic-Parmesan butter, garnish with lemon if desired.
