Description

Tender chicken bites marinated in a bright lemony marinade and brushed with garlicky butter and Parmesan, perfect for grilling or stovetop.

Ingredients

  • 1–1½ lb chicken breasts (cubed, or thighs)
  • 3 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1–2 tsp no salt added lemon pepper seasoning
  • ½ tsp salt
  • ¼ cup lemon juice
  • 4–6 Tbsp butter
  • 3 cloves garlic (minced)
  • ¼ cup Parmesan (grated)
  • 2 tsp lemon juice (optional)
  • 3 Tbsp fresh parsley (chopped)
  • 1 small lemon (sliced for garnish, optional)

Instructions

  1. 1. Prepare the chicken: Trim excess fat and cut chicken into even 1–1½ inch cubes.
  2. 2. Marinate: In a bowl, combine chicken with olive oil, lemon juice, paprika, garlic powder, onion powder, lemon pepper seasoning, and salt. Marinate for 15 minutes to 4 hours.
  3. 3. Skewer the chicken: If using wooden skewers, soak them in water for 30 minutes. Thread marinated chicken onto skewers.
  4. 4. Make the garlic-Parmesan butter: Melt butter and simmer minced garlic for about 2 minutes. Stir in Parmesan and parsley.
  5. 5. Preheat the grill: Aim for medium-high heat (around 400ºF).
  6. 6. Grill the skewers: Cook the skewers for 8–10 minutes, turning often and brushing with garlic-Parmesan butter.
  7. 7. Check doneness and rest: Ensure chicken reaches an internal temperature of 165ºF. Let rest and brush with remaining butter.
  8. 8. Garnish and serve: Sprinkle fresh parsley and lemon slices for garnish. Serve hot.
